さば煮付

サバの切り身を醤油・酒・砂糖・みりんの煮汁で煮た料理。煮る前にサバに塩を振り、熱湯にくぐらせ、さらに煮汁に生姜を加えることで魚臭さを消している。

Simmered mackerel

Mackerel fillet simmered in broth made from soy sauce, sake, sugar, and mirin sweet sake. The fishy smell is removed by sprinkling salt on the mackerel and briefly submerging it in boiling water for a blanch before simmering, and adding ginger to the broth.
