(魚の)粕焼き

お酒を絞った後にできる酒粕に漬けた魚や肉、野菜を「粕漬け」と呼び、「粕焼き」はそれを焼いた料理。酒粕に含まれる酒には魚の臭みを取る働きがある。

Grilled sake-lee-marinated fish

“Kasuzuke”, a dish in which fish, meat, or vegetables are marinated in sake lees, is called “kasuyaki” when grilled. The sake contained in sake lees help remove the smell of the fish.
