食材に砂糖、醤油などの調味料を浸透させ、甘辛く煮つめた保存食品で、日本の伝統的なおかず。小魚、貝類、昆布などの水産物や野菜などの農産物、肉類などの佃煮がある。江戸時代の東京都佃島が由来と言われる。
